Canada's first Gordon Ramsay Hell's Kitchen officially opens September 14 at River Cree Resort & Casino on Enoch Cree Nation, about 20 minutes west of downtown Edmonton.

The local dishes are the interesting part
River Cree described the concept as blending Ramsay's signature dishes with exclusive local creations. That turned out to mean something specific.
Baked bannock with whipped honey butter and Maldon sea salt, $12. It's the cheapest item on the menu and it's an Indigenous staple, served in a Gordon Ramsay dining room on Enoch Cree Nation.
Three sisters salad, $16. Roasted corn, black beans and roasted butternut squash with goat cheese, radicchio and a smoked paprika maple vinaigrette. The three sisters are corn, beans and squash, the companion planting trio grown together across Indigenous North America for centuries.
Elk ragout, $28. Farm-raised elk with San Marzano tomato, tagliatelle and parmigiano reggiano.
Braised bison short rib, $54. Potato cake, sautéed spinach, crispy onions, red wine demi-glace.
Four dishes that couldn't be on a Hell's Kitchen menu anywhere else.

The signature dish
Beef Wellington, $75. Potato purée, glazed root vegetables, red wine demi-glace.
It's the dish the television show is built around and the one most people are coming for.
The rest of the entrées
20 oz prime bone-in ribeye — $95. Roasted garlic, maitake mushrooms, blistered tomatoes, truffle peppercorn sauce. The most expensive item on the menu.
8 oz filet mignon — $70. Garlic compound butter, confit cipollini, truffle peppercorn sauce.
Lamb chop — $50. Butternut purée, harissa butter, sautéed spinach, lamb jus.
Roasted halibut — $43. Smoked pil pil sauce, clams, braised fennel, chive oil.
Crispy skin salmon — $39. Miso marinated, sushi rice, baby bok choy, miso beurre blanc, scallion oil.
Winter chicken — $28. Half roasted chicken, wild mushrooms, chicken butter sauce, herbs.
Hell's Kitchen burger — $26. Applewood smoked bacon, ghost pepper jack, fresno chili jam, avocado, crispy onions, tomato, spicy aioli.
Tofu fried rice — $26, the vegan option. Cabbage, kale, pickled mushrooms, spiced cashews, sesame seeds, peanut sauce.
Starters
Lobster risotto — $40. Butter-poached lobster tail, saffron broth, tomato soffritto.
Pan-seared scallops — $33. Pea purée, braised bacon lardons, pickled fennel, chicken jus.
Wagyu meatballs — $23. Wagyu beef and pork, slow-roasted tomato sauce, polenta croutons, parmesan, basil.
Hellfire hot wings — $22, with blue cheese dressing.
Oysters on the half shell — $32 for a half dozen, $48 for a full. Chef's daily selection, mignonette, cocktail sauce.
Steak tartare — $25, with crispy capers, cured egg yolk and brioche toast points. Tuna tartare — $23, with soy chili vinaigrette, pickled fresno and pear.
Pumpkin soup — $14. Caesar salad — $16, with grilled chicken $8 or shrimp $10. Golden beet salad — $21.
Sides and add-ons
Sides run $9 to $14.
Baked macaroni and cheese with smoked gouda, mozzarella and crispy prosciutto is $14. Polenta is $12. Crispy brussels sprouts with chili glaze are $12. Green beans with crispy prosciutto are $11. Potato purée is $10. Market salad is $9.
Add a lobster tail to anything for $32. Truffle butter is $7, garlic butter $6.
What a meal actually costs
Worth doing the arithmetic before you book.
Two people ordering the signature experience, two Beef Wellingtons, a starter to share and two sides, lands around $190 before tax, tip or drinks.
Two people going high end, a ribeye and a filet with the lobster risotto, is closer to $245 before extras.
The budget version exists. A three sisters salad and the Hell's Kitchen burger is $42 for one person.
Groups of eight or more get an automatic 18 per cent gratuity.

They're still hiring
The restaurant ran a hiring push earlier this year, and a number of the roles didn't require culinary training.

Opening a restaurant of this size typically means continued hiring through the first several months, as the operation settles into actual volume rather than projected volume.
What to expect on opening week
Reservations will be difficult. A first-in-Canada restaurant attached to a television franchise, opening on a Monday, in a market that doesn't get many of these.
If you can't get in, the dining room is open every night and the pressure usually eases after the first several weeks.
